Using XML-style tags

Why do many prompt engineers wrap parts of a prompt in tags like <document> and <instructions>?

<instructions>Summarise the document in 3 bullet points.</instructions>
<document>
{{ticket_text}}
</document>

A.Tags make the model run fasterB.Models can only read text inside tagsC.Tags clearly mark where each part starts and ends, so the model mixes them up less and outputs are easier to parseD.Tags encrypt the content so the provider cannot read it
